5 Way to Use Leftover Turkey

Once your turkey dinner is over, take advantage of the leftovers to prepare meals for later.

The following are five ways I use leftover turkey:

1.   After the food has cooled, place turkey, stuffing, potatoes, and leftover vegetables on a foil plate.  Cover the potatoes and turkey with gravy.  Wrap and freeze.  When ready to heat, use a conventional oven or transfer dinner to a micowave safe plate and heat in the microwave.  I use one foil plate for one serving. 

2.  Place sliced turkey in a container and freeze.  Slices can be thawed and used in turkey sandwiches for school or work lunches at a later date.

3.  Use a food processor to puree cooked turkey, onion, and dill pickles.  Remove from processor and add just enough mayo to moisten.  Spread on crackers for an appetizer, on bun halves, or use in sandwiches with lettuce and your choice of vegetables - cucumber, peppers, tomato.  Cranberry sauce can be added to the sandwich instead of the vegetables.

4.  Hot turkey sandwiches are a good use for leftover turkey and gravy.  I toast the bread, place turkey on the slices and cover with hot gravy.  A salad makes a tasty addition to the sandwich.

5.  Turkey soup is a favorite.  Boil the carcass with water or broth.  Remove meat from bones and return turkey to broth in pot.  Add your choice of potatoes, carrots, celery, peas, and/or beans to the broth and turkey.  Season to taste.  Note:  I have frozen the carcass after dinner in one or two freezer bags to make soup later.

There are many other ways to use leftover turkey.  Cubed cooked turkey can be added to pizza, stir fry, or a pasta casserole.
